Killing Bacteria by Cooking

- Most food-bacteria will be killed when cooked at a high enough temperature

Freezer Zone
A
- Below -18 degrees
- Microbes are dormant and are unable to reproduce
- Store for extended periods of time
- May cause some textural changes to food

Cold Zone
A
- 0 - 5 degrees
- Bacteria are ‘sleeping’ and reproduce slowly over time
- Store for short periods of time
- Maintains most desirable food characteristics

Danger zone
A
- Between 5 - 63 degrees
- 37 degrees is the optimum bacteria to reduce
- Do not eat food that has stayed at this temperature for more than 2 hours

A
- Above 65 degrees
- When reheating food it should be to about 75 degrees
- At 72 degrees the bacteria starts to get destroyed and are unable to reproduce
