Built Cocktail : Old Fashioned Glass
Lightly muddle quartered lime and 1/4 oz simple syrup
Do not overmuddle to prevent bitter lime skin taste
Fill glass with crushed ice
Add 1 2/3 oz cachaça
Churn for 10 seconds to chill
Add more crushed ice if needed.
Queens Park Swizzle
Built Cocktail : Collins Glass, crushed ice Add 6 Mint leaves 1/2 oz demerara syrup (2:1) 1 1/2 oz Lightly Aged Rum Add crushed ice Swizzle (keep mint near bottom if possible) Top with Peychauds or Angostura Bitters Garnish with Mint Sprit
Hemingway Daiquiri
Named after Ernest Hemingway after visiting the El Flordita bar in Havana. Mehan’s Spec 2 oz White Rum 3/4 oz Lime Juice 1/2 oz Maraschino Liqueur 1/2 oz Grapefruit Juice (Splash Simple Syrup to taste) Shaken Strain into coupe. Garnish with Lime Wheel
Ti’ Punch
Rum importer Ed Hamilton popularized this recipe by introducing authentic swizzle sticks : le boi lélé
Ti’ is Creole contraction of the french word Petit, in this context meaning “a small punch”
Built Cocktail: Chilled Rocks Glass, crushed ice
2 oz Rhum Agricole (aged or blanc)
1 barspoon Cane sugar syrup
1 lime disk (cut off the end of a lime)
Squeeze both sides of Lime (express oils) into a chilled Rocks Glass, then add to glass
Add sugar and rhum.
Top with pebbled ice, swizzle, then pack with more ice, and swizzle again.

El Presidente
2 oz blended lightly aged rum 1 oz blanc vermouth 1/4 oz dry curacao 1 barspoon grenadine 1 dash angostura bitters Stir and strain into chilled coupe Garnish with Orange Twist
The Millionare Cocktail
Paper Plane Spec 3/4 lime juice 3/4 oz apricot liqueur 3/4 black pot still rum or blended aged rum 3/4 oz sloe gin Double strain into chilled coupe Garnish with Lime Wheel

Full Spiral cut Orange Skin (line the glass with one lip hanging out) 3/4 oz lime juice 3/4 oz orange juice 1/4 oz Cinnamon syrup 1/4 oz Vanilla Syrup 1/4 oz Allspice Dram 2 oz Column still aged Rum 1 dash Angostura Flash Blend then open pour into glass
Hurricane
2 oz Black Blended Rum 1 oz Passion Fruit/Fashionla Syrup 1 oz lemon juice Fill drink mixer tin with ingredients, add 12 oz crushed ice+ 4 agitator cubes, flash blend and ump into hurricane glass, Garnish with Umbrella
Chartreuse swizzle (tradtional punch recipe guide)
3/4 oz lime juice (sour)
1 oz pineapple (sweet)
1/2 oz Falernum (strong*)
1 1/2 oz Green Chartreuse (weak)
Dont forget spice to be nice in falernum
Jungle Bird
Created at the Aviary Bar in Kuala Lumpur Hilton, 1978 one of the last tiki cocktails before Tiki died to Disco and death of craft cocktails. 2 oz pot still Jamaican Rum 3/4 oz Campari 1 1/2 oz Pineapple Juice 1/2 oz lime juice
