What is the difference between sugar ripeness and physiological ripeness in grapes?

A

Sugar ripeness is when a grape has matured according to its sugar level, whereas physiological ripeness is when it appears mature according to the seeds, skins and flavour. Heat increases sugar levels and can fasten the grape ripeness.
