What are some sensations that contribute to mouthfeel?

A
  • Alcohol
  • Temperature
  • Spiciness (chilly)
  • Coolness (menthol coolness)
  • Astringency (bitterness and mouthfeel from tannins)
  • Carbonation (small bubbles = creamy, large bubbles = aggressive)
  • Mouthcoating (how the wine ‘sticks’ inside the mouth)
  • Body or viscosity (how thick the wine is)
