Appearance of fresh fish

- Eyes: Bright and full
- Gills: bright and red in colour
- Flesh: firm and resilient, when pressed the impression goes quickly
- Scales: lie flat, be moist and plentiful
- Skin: should be covered with fresh sea slime or be smooth & moist

Purchasing
A
- Pleasant smell
- Fresh fish purchase daily from market
- Fresh fish must be packed on ice
- Flesh must not be damaged
- Medium-sized fish best buy, larger fish are coarse & small fish lack flavour

Purchasing Shellfish
A
- Purchase alive except for shrimps and prawns
- Stored in cold room in boxes
- Cook as soon as purchased
- Prawns: even sized
- Lobsters: bluish-black n colour, bright red when cooked. Claws attached
- Oyster - shells closed, fresh smell, clean
