Appearance of fresh fish

  • Eyes: Bright and full
  • Gills: bright and red in colour
  • Flesh: firm and resilient, when pressed the impression goes quickly
  • Scales: lie flat, be moist and plentiful
  • Skin: should be covered with fresh sea slime or be smooth & moist

  • Pleasant smell
  • Fresh fish purchase daily from market
  • Fresh fish must be packed on ice
  • Flesh must not be damaged
  • Medium-sized fish best buy, larger fish are coarse & small fish lack flavour

A
  • Purchase alive except for shrimps and prawns
  • Stored in cold room in boxes
  • Cook as soon as purchased
  • Prawns: even sized
  • Lobsters: bluish-black n colour, bright red when cooked. Claws attached
  • Oyster - shells closed, fresh smell, clean
