this shows a pause and slows the writing down
e.g. surely… it couldn’t be… maaa
When is a hyphen used?

to join a compound adjective or a compound noun, or prefixes
e. g. father-in-law is a compound noun
e. g. fifty-odd teachers - compound adjective
e. g. ex-husband - prefix
When is a dash used?
it emphasises extra information like a bracket does.
e.g.
i’m afraid i can’t stay - I have to go!
