What are the intrinsic factors of microbial growth?
The properties of the food such as Nutrients, PH, water activity ect
What are the extrinsic factors to microbial growth?
Conditions during storage such as temperature and humidity
What PH are yeast and moulds most present at?
2-5 PH
What is the most common spoilage organism of vegetables?
Pseudomonas SP
Define inactivation
Killing of the microbe
Define inhibition
Slowing the growth rate of bacteria
How does the most probable number method work to determine microbe count?
You dilute the medium itself unti a specific pattern forms which can be checked against a key
How do lactic acid bacteria help to preserve food?
They ferment sugars into acids which lower the overall PH of the food
