A
- It is achieved using processes e.g: evaporation/ dehydration
-Used to slow down enzymatic or microbial activity

- In a logical sense can help extend shelf life of food products.

A
-controls temp food so it does not reach the danger zone of 5-60 degrees celsius
-kelps destroy enzymes and microorganisms by its high temperatures

- Destroys aerobe microbes ( organisms that grow w the presence of oxygen) as they cannot function without air.
