What does keeping personal hygiene mean?
Keeping yourself and the things around you clean to stop the spread of bacteria and germs
Why is it so important to wash your hands thoroughly?
Even though your hands may look clean they could still have bacteria in your knuckles and fingernails that you can’t see

How long do you wash your hands for?
20:20 rule, wash your hands for 20 seconds and dry your hands for 20 seconds
How should your hair be?
Clean and tied back with a hairnet if available
Should you have long nails and jewellery on?
No, short clean nails with no nail polish and all jewellery taken off
What kind of shoes should you wear in the kitchen?
For safety reason wear close-toed shoes
How does one use gloves?
Wash and dry hands before putting gloves on, use a new pair of gloves in between tasks and wash your hands again after disposing of the gloves
How do you sample food?
Use a clean spoon every time you sample as your mouth has a lot of bacteria
Do you clean or sanitise first?
Clean first to remove dirt and grease, sanitise after to prevent the growth of bacteria
What is a pest?
Insects, rodents, birds and domestic animals
What are ambient foods?
Foods that are safe to be stored at room temperature, must be off the ground in a clean, dust-free environment
What temperature should frozen food be kept at?
-18 degrees C or below
What temperature should chilled foods be kept at?
5 degrees C or below
