Separated from the carcass.
ID’d with the CVS
Placed on the correct viscera tray
Not punctured (paunch, bladder, intestines)

Have bung removed
Liver should be removed

Intact, hepatic lymph nodes present, gall bladder attached
Lobes must be intact
Pluck presentation

Separated from the CCS and placed in correct tray

Must not be removed or incised prior to inspection
Mediastinal LN must be presented
The heart Should be separated from pericardium
Kidney presentation requirements
Should be removed from CCS
Must be ID’d with the CCS
Both kidneys must be present and enucleated
Must be intact
Must not be incised prior to inspection( a small nick is ok)
CCS presentation
Must be
ID’d with viscera/head
Should be Intact. No missing parts
Kept separate from other CCS, no touching each other
The kidneys, diaphragm and tail may be left attached or placed in tray
Obviously diseased CCS must receive as complete a work up as possible
Must be fully skinned, feet off, viscera removed
No obvious disease to be removed before inspection
Head and tongue
Nothing saved requirements
If not saved for edible nothing needs to be saved
Tongue only requirements
Separated from the CCS
Placed (batch)
ID’d (green ring)
Head not required
Head presentation requirements
Must be separated from CCS
Placed upside down in viscera tray
ID’d with the the CCS
Fully skinned head
Tongue dropped
Lymph nodes must be present and intact
Obviously diseased heads must receive as complete a work up as possible
