- The GIT must be presented intact
- The Oesophagus must be sealed to prevent leakage.
- The complete GIT must be removed from the carcass and placed in the appropriate viscera pan and it must be identifiable with the carcass from which it came.
- The liver MAY be separated from the tract and placed in the edible-purpose tray corresponding to the carcass from which it came.
- The paunch, intestines and bladder must not be punctured.
- The testicles and pizzle may be placed on the viscera table along with other edible product, otherwise left attached to the carcass. If left attached to the carcass they must be completely removed from the scrotum.

What is the parietal surface of the liver?
The surface that lays against the right side of the abdominal cavity, it is smooth and has no features other than the remnant of the falciform ligament
What is the visceral surface of the liver?
The surface that covers the pancreas and is attached to the small intestine by the common bile and pancreatic ducts. Other attachments include the falciform ligament, vena cava, hepatic artery and portal vein.
What are the 3 lobes of the Liver?
Ventral Lobe (V)
Dorsal Lobe (Other half)
Caudate Lobe (Near renal impression)
Where can you locate the Oesophageal notch?
It is an identation formed by the Oesophogus pressing against the liver near the vena cava
What is the Portal Fissure?
It is where the mesenteric vein enters the portal vein, the hepatic artery enters the liver and the common bile duct and lymph vessels leave the liver.
What role does the Vena Cava serve?
It is a large vein that takes blood from the body and returns it to the heart. It travels from the pelvic cavity along the spinal column to the right ventricle of the heart. It is attached to the dorsal lobe near the renal impression. Blood from the liver enters the vena cava via the hepatic veins.
