Q

What are the GIT presentation requirements for all species?

IORLPT
PILOT R

A
  1. The GIT must be presented intact
  2. The Oesophagus must be sealed to prevent leakage.
  3. The complete GIT must be removed from the carcass and placed in the appropriate viscera pan and it must be identifiable with the carcass from which it came.
  4. The liver MAY be separated from the tract and placed in the edible-purpose tray corresponding to the carcass from which it came.
  5. The paunch, intestines and bladder must not be punctured.
  6. The testicles and pizzle may be placed on the viscera table along with other edible product, otherwise left attached to the carcass. If left attached to the carcass they must be completely removed from the scrotum.

Q

What is the visceral surface of the liver?

A

The surface that covers the pancreas and is attached to the small intestine by the common bile and pancreatic ducts. Other attachments include the falciform ligament, vena cava, hepatic artery and portal vein.

Q

What role does the Vena Cava serve?

A

It is a large vein that takes blood from the body and returns it to the heart. It travels from the pelvic cavity along the spinal column to the right ventricle of the heart. It is attached to the dorsal lobe near the renal impression. Blood from the liver enters the vena cava via the hepatic veins.

A
  1. Contains waste pigments from the breakdown of red blood cells.
  2. Emulsifies fat in the small intestines into minute globules to assist digestion
18
Q

What are the liver presentation requirments?

ISCL

LICS

A
  1. Liver must be presented intact
  2. The liver may be seperated from the intestines and placed in the corresponding viscera table pan.
  3. The liver must be Identifiable with the carcass it came from.
  4. The hepatic lymph nodes must be left intact on the liver.
