8 to 10 green peppers at one time
One case = 10 6 by 6 pans
Hold time is 48 hours
Mushrooms
10 lb box
One case mushrooms = 8 6 by 6 pans

Lettuce
50/50 blend of Iceberg and Romaine Lettuce
3 heads of each = 1 full size pan
Use one bucket of ice to “shock” for 10 minutes
Remove and drain for 15 minutes
Cut off bottom 3 inch of stalk
Stack 8 leaves of romaine and make three cuts (middle, side, side)
Pin blade on 8 line
Run lettuce through 2x
Lettuce hold time 24 hours
Salad
Mixed lettuce
3 wedge tomatoes
3 half moon slices of cucumber
3 individual banana peppers
Salads should be discarded at the end of each day
Grilled meat salads get one portion of chicken or steak.

Meat Tempering
Chicken pulled each night prior to use
Steak pulled 48 hours prior to use
Day 1: pull the required number of cases of steak from freezer and place on a lower shelf in walk in cooler
Day 2: Remove the cases of steak from the cooler and place each case of product into 1/2 size plastic pan
One case of steak or chicken fits into one 1/2 size plastic pan
Ideal tempered meat should be in a half thawed state with visible ice crystals.

Place folded slice into 6 by 6 pan
Hold time 48 hours
