Description of maltose:
Made of 2 alpha glucose, and produces maltose, bonded with a glycosidic bond (at the shared oxygen) and H2O.
Molecular formular is C12H22O11
It is a disaccharide.
Description of sucrose:
Made of 1 alpha glucose and 1 fructose, produces fructose bonded with a glycosidic bond (at the shared O2) and H2O.

Condensation reactions:
When they occur between monosaccharides to form a disaccharide, water is released.
Glycosidic bond:
When sugar units condense, the bond between them at the OXYGEN is a glycosidic bond.
Alpha glucose + Alpha glucose –>
Maltose + water
Alpha glucose + fructose –>
Sucrose + water
Alpha glucose + galactose –>
Lactose + water
Hydrolysis reactions:
Disaccharides can be broken down by adding water - hydrolysis - which shows it is a reversible reaction.
