What is a polysaccharide?
A polysaccharide is a complex carbohydrate formed from a number of simple sugars
List some types of polysaccharides
- starch
- glycogen
- pectin
- fibre/cellulose
- dextrin
What is starch and where is it found?
Starch is the major form of stored carbohydrates in plants.
It is found in fruit, vegetables and cereals
What is glycogen and where is it found?
Glycogen is the stored form of glucose in animals and human beings.
It is found in the liver and muscles.
Where is glycogen stored and transported?
Glycogen is stored in the liver and muscles and sent to the blood stream to give instant energy
What is pectin and where is it found?
Pectin is a gelling substance found in ripe fruit (pips and seeds)
What is cellulose and what are the different types?
Cellulose is fibre. The different types are:
- cellulose
- hemicellulose
- lignin
What is bran and where is it found?
Bran is cellulose, a type of fibre, and is found in whole-wheat flour, whole grains (unrefined), pulses and fruit and vegetables
What is hemicellulose and where is it found?
Hemicellulose is a type of fibre found in bran and whole grains
What is lignin and where is it found?
Lignin is a kind of fibre found in mature veg, wheat and fruits with edible seeds
What is dextrin and where is it found?
Dextrin is the result of dry heat applied to starch which browns the starch. It is found in toast and brown flour.
