their head is formed by phosphate that is hydrophilic and the fatty acid tails RE hydrophobic, because of these properties they tend to arrange in a phospholipids bilayer, in this way only the head interacts with water.

A

in the bilayer there are also other molecules, there are a number of different proteins embedded in the membrane, some transport substances across the membrane, some help in cell-to-cell communications, and there are also short chains of sugar attached to the outer surface of some peripherals proteins, forming glycoproteins, which serve as recognition to other cells. Cholesterol is present as well, it gives support and regulates fluidity. this is all called FLUID MOSAIC MODEL, a flexible pattern.
