How did the Piedmont “modernist” change how they made the wines of Nebbiolo?

A

Used temperature-controlled tanks to ferment at warmer temperatures and more quickly, thereby minimizing astringent tannins to some degree. Juice could be pumped over the grape skins in a way that imparted maximum color to the wine but shortened the length of fermentation and thus mitigated harsh tannin.
- Began to understand how to divide the aging of Nebbiolo between barrels and bottles so that the fruit quality and potential suppleness of the wine would not be safcraficed
