Spaghetti Pomodoro (Scotts signature dish!)
Tomato and basil infused with roasted garlic chili and basil
Black campanili with Clams
Manilla clams are sauteed with toasted garlic, clam stock, and stewed tomatoes are added along with fresh basil, the pasta, butter and olive oil. The dish is finished with a sprinkle of bottarga breadcrumbs.
Fettuccine with Mushrooms, Roasted Garlic & Escarole
This dish consists of wild mushrooms that have been cooked with roasted garlic and herbs. The pasta is cooked with the mushrooms, escarole (bitter green), pasta water, butter & olive oil. Finished with parmigiana.
Ricotta and Mascarpone Ravioli Fiore with Braised Short Ribs
The hand made fresh ravioli filled with a mixture of braised short rib, ricotta, mascarpone cheese, caramelized shallots and fresh herbs. The sauce consists of the shortrib braising liquid, butter, olive oil, fresh herbs and finished with parmigiana.
Torchio with Sausage and Porcini Ragu
Pork fennel sausage is slow cooked with shallots, garlic, chili, herbs, roasted porcini and chicken reduction. Finished with fresh herbs.
Cavatelli with Duck and Black Truffles
Duck legs are slow braised with red wine and chicken reduction until tender. They are then pulled, the meat is then put back into the reduced braising liquid and finished with fresh herbs and preserved truffles.
Nidi di Rodine
*stuffed with ricotta, bechamel and smoked salume, topped with truffle jus*
The stuffing is a cheese mix consisting of ricotta, bechamel, (thick cream sauce) chooped salume and fresh herbs. The sauce is a mix of chicken reduction and preserved black truffles. The pasta itself is essentially one long raviol that is wrapped around itself.(looks like a flower)
