Tonnarelli Cacio e Pepe
Pecorino and black pepper. Tonnarelli pasta made fresh in house, from egg, water, and flour. Tossed with pecorino, black pepper, and sometimes butter.
Allergies: Dairy, gluten.
Pairing: Grosjean Freres 2008, Vigne Merletta, Fumin
Chitarra con le Accuighe
Sicilian anchovy and butter. Dry pasta thrown in the pan with fried anchovy, pasta water, butter, colatura, and grana padano.
Pairing: Dairy, gluten.
Bucatini all’Amatriciana
Dried pasta fortified with tomato, chile, and guanciale from La Quercia. Amatriciana originates from Amatrice, a small town in Lazio, 100 miles from Rome.
Pairing: Sesti 2010 Rosso di Montalcino.
Spaghetti alla Carbonara
Dried spaghetti from mancini, tossed with guanciale, rendered fat, egg, black pepper, pecorino.
Pairing: Marco de Bartoli, 2012 Grappoli di Grillo
Spaghettini alle Vongole
Dried spaghettini from Mancini, tossed with white wine, clams, garlic, olive oil, pepperoncino, parsley.
Vongole broth: mussels, clams, white wine, parsley stems, garlic, olive oil, chili flakes.)
Traditionally uses vongole veraci, a wild mediterranean clam that we can’t get in the USA.
Pairing: Benanti 2011 Carricante
Papperdelle alla Bolognese
Pork/ Lamb Ragu, tomato, grana padano. Fresh pasta, made in house. Bolognese: ground suckling pig/ lamb, salumi trim, cheese rind, grana padano, milk, parsley, fennel seed.
Sauce: Heavy cream, tomato, butter, parsley, lemon, grana padano.
Pairing: Adanti 2007 Sagrantino di Montefalco.
Malfatti
Braised suckling pig and arugula. Malfatti is made fresh from leftovers of torn pasta sheets. Pork (pork stock, white wine), veal stock, lemon, arugula, grana padano.
Pairing: Rocche dei Manzoni, Vigna de la Roul.
All’ Arogosta
Dried pasta made with lobster stock, tomato, lobster butter, lemon, parsley, chili flake, thai basil, lobster meat.
Lobster stock: lobster shells, shallot, garlic, cognac, white wine, chicken stock, parsley, tomato paste, fresh herbs.)
Allergy: chicken, dairy, gluten, shellfish.
Strozzapreti
braised lamb neck, white bean, and tomato.
Cavatelli
pork sausage, tomato, rapini, pickled chili. Garlic puree, lemon, pecorino.
