Unami - wine seems more drying/bitter, more acidic, less sweet/fruity
Salty - less drying/bitter, less acidic, more fruity, more body
Acidic - less drying/bitter, less acidic more sweet/fruity (unless wine acid is low and acid food can make wine seem less fruity
Highly flavored - wine overwhelmed
Fatty/Oily - less acidic
Chili heat - wine increases heat, seems more alcoholic
