Amuse Wine

BILLECART-SALMON, BRUT ROSÉ, FRANCE, MAREUIL-SUR-AŸ

Nose: tangerine, pear, flowers, fennel
Palate: orange, strawberry, spice cake, raisin bread, sweet smoke
About: Founded in 1818 with the marriage of Nicolas François Billecart and Elisabeth Salmon it is one of the few to remain family owned. The production secrets and the vinification methods of this cuvee go back to the origins of the House of Billecart-Salmon and have been handed down for seven generations. It is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine.

DOMAINE DIDIER DAGUENEAU “BLANC FUMÉ DE POUILLY”2010

Nose: smoky red currant, lime, nettle
Palate: lemon, white peach, chalk, herbs
About: Domaine Didier Dagueneau has been a benchmark in French Sauvignon Blanc for decades. When the master himself passed on in 2008, his son and life-long apprentice Louis-Benjamin stepped up to the wheel to bring the Domaine into the future. This wine is made of the younger vines from the same vineyard as the famous “Silex” . A note on the label; the music was composed by Francois Cristin, a musician friend of Didier’s. It is written for trumpet (b flat major) and french horn (f major).

1997 RONCHI DI CIALLA SCHIOPPETTINO DI CIALLA

Nose: rustic dark berries, game, black cherry, violets
Palate: blackcurrant, black plum, green peppercorn, spice
About: The Rapuzzi family is credited with saving the Schioppettino grape from near extinction in the 1970’s. It is the one grape indigenous to the region that really does grow uniquely in one appellation alone–Colli Orientali del Friuli. Only a few currently make it into the United States.

2003 JORDAN ALEXANDER VALLEY CABERNET SAUVIGNON

Nose: blueberry, black cherry, cardamom
Palate: dried blackberry, chocolate, subtle earth, cedar, cigar tobacco
About: From the first vintage in 1976, Tom Jordan has sought to create a soft, approachable Cabernet Sauvignon in which the winemaking is simply a logical completion of nature’s work. Blend: 81% Cabernet Sauvignon, 15% Merlot, 2% Petit Verdot, 2% Cabernet Franc, abv 13,5%.

WHITE ROSE PINOT NOIR 2010

Nose: cinnamon sticks, cedar, wet leaves
Palate: cherry, rose petal, raspberry, sweet spice, forest floor
About: The winery is located in an old farm house sitting atop of a hill with vines planted on a prime southeast-facing slope in the Dundee Hills AVA of Yamhill County.Wine is aged for 15 months in French oak and it’s a blend of grapes from four vineyards.

LEMON MERINGUE TART OR POACHED PEAR Wine

Nose: fresh–baked lemon bars, honey, caramel
Palate: citrus, peach, pineapple, rose
About: Dolce Winery is the only winery in North America that is solely devoted to producing a single, late harvest wine. Dolce’s 20 vineyard acres are located in Coombsville, east of the city of Napa, and are situated at the base of the Vaca Mountains. Varietals; 82% Semillon, 18% Sauvignon Blanc.

Chocolate Dessert Wine

GRAHAM’S 1994 PORT

Nose: chocolate, plum, figgs
Palate: crushed berries, black cherry, pepper, full-bodied
About: Founded in 1820 in Portugal’s Douro valley, Graham’s has developed over time an unmatched reputation as one of the greatest names in Port. A classic growing season produced grapes in quite superb condition. One of the finest Port vintages of the last 25 years and one that has been universally declared by growers and shippers.
