  • During processing or water soluble
    Eg. Milling flour - Iron/ niacin/ thiamin are added to flour
  • Nutrients are added to ensure vulnerable groups get enough Vits & mins

  • When creating substitute products to ensure they have similar nutritional value to their original
    Eg. MARGARINE - Vit A & Vit D is added to make it more like Butter
