What are they?
A
- They’re used to improve the nutrient content of certain foods & restore lost nutrients

How are nutrients lost?
A
- During processing or water soluble
Eg. Milling flour - Iron/ niacin/ thiamin are added to flour - Nutrients are added to ensure vulnerable groups get enough Vits & mins

CALCIUM CARBONATE:
A
- Is added to all brown & white flour products
- 20% of UK Dietary calcium comes from bread & flour products

What is FORTIFICATION?
A
The addition of adding nutrients to food whether they were originally present or not

When is FORTIFICATION used?
A
- When creating substitute products to ensure they have similar nutritional value to their original
Eg. MARGARINE - Vit A & Vit D is added to make it more like Butter

What are the RULES surrounding fortification?
A
- Must be clearly labelled
- Some products are not allowed to be fortified by law
