- Enhances iron and selenium absorption

Discuss iron-zinc interactions and their effects on the body.
- Iron reduces absorption of zinc in aqueous solutions
- population groups with a higher requirement for zinc may be more sensitive to iron/zinc interactions
- serum zinc levels were used and may not accurately reflect zinc status therefore hypothesis cannot be confirmed

- Intestine cannot differentiate between iron and manganese
- High manganese consumption in tea drinking populations increases their risk of decreased iron utilisation.
What 2 nutrients does calcium affect the absorption of?
- Reduces iron absorption (short term)
- Long term studies found no negative effects on iron status
- Calcium and manganese compete for intestinal absorption
- In presence of phytate (storage form of phosphorous) calcium may form ca-zn-phytate complexes in the intestines
What nutrients does zinc supplementation affect?
- Reduces iron and copper status
- However, in the food matrix this is not the case
