Explain the process of Noble Rot

A

Grapes must be fully ripe.
Need humid, misty mornings, dry autumn afternoons.
Rot punctures the grapes with microscopic filaments which make holes.
Water then evaporates out, concentrating the sugars acids and flavours in the grapes.
Warm sunny afternoons slow development of rot.
Sauternes, Beerenauslese, trockenbeerenausle.
Honey, ginger, apricot, dried fruit.
