Cadillac / Golden Margarita
2 ounces good-quality reposado tequila
1 ounce Grand Marnier
1 ounce fresh lime juice
Lime peel spiral
Shake the liquid ingredients vigorously with ice.
Strain into a chilled cocktail glass. Garnish with the lime spiral..
Classic Margarita
2 lime wedges
Kosher salt
1½ ounces premium silver tequila
1½ ounces fresh lime juice
1 ounce Cointreau
Rub a wedge of lime around the rim of a chilled margarita glass, and salt the rim.
Fill the prepared glass with ice.
Shake the liquid ingredients vigorously with ice.
Strain into the prepared glass. Squeeze the remaining lime wedge over the drink, and drop it in.
Tequila Colada
1½ ounces tequila
¼ ounce Kahlúa
2 ounces pineapple juice
¾ ounce heavy cream
¼ ounce coconut cream
Shake the ingredients vigorously with ice.
Strain into an ice-filled highball glass.
Tequila Fizz
2 ounces silver tequila
Tropical Martini
Fill a mixing glass with ice.
2 oz Pineapple Vodka
1 oz Coconut Rum
1 oz Banana Liqueur
Dash of Orange Juice.
Shake.
Strain into chilled glass.
Garnish with pineapple and cherry.
Trip to the Beach
Fill a tall glass with ice.
¾ oz Vodka or Peach Vodka
¾ oz Coconut Rum
¾ oz Peach Schnapps
Fill with orange juice.
Shake.
Hibiscus-Lemongrass Iced Tea Cooler
MAKES 4 SERVINGS
6 cups boiling water
6 hibiscus tea bags (Red Zinger tea)
1 cinnamon stick, broken into pieces
Grated zest of 1 orange
½ cup lemongrass syrup (page 73)
4 lemongrass stalks
Bring the water to a boil in a large saucepan.
Remove from the heat and add the tea bags, cinnamon, orange zest, and lemongrass syrup.
Cover and let steep until cool.
Strain into ice-filled highball glasses.
Garnish each glass with a stalk of lemongrass to stir.
NOTE: Lemongrass syrup is great to have on hand; it makes a light summer thirst-quencher when a few tablespoons are added to a glass of ice and sparkling mineral water.
Negroni
1½ oz. dry gin
1 oz. sweet vermouth, preferably Carpano Antica
¾ oz. Campari
1 orange
Step 1
Stir 1½ oz. gin, 1 oz. sweet vermouth, preferably Carpano Antica, and ¾ oz. Campari in an ice-filled mixing glass until very cold, about 30 seconds.
Strain cocktail through a Hawthorne strainer or a slotted spoon into an ice-filled rocks glass.
Step 2
Using a small serrated knife, remove a 1” strip of peel from 1 orange (some white pith is okay); it should be stiff enough to provide some resistance when bent. Twist over drink to express oils; discard. Garnish with 3 very thin orange slices.
