Moulds Flashcards
is a type of fuzzy fungus that grows naturally on foods and plays an
important role in the decomposition of matter, or rotting.
Mold
the process of food becoming damaged. Spoilage bacteria will
make food rot.
Spoilage
A few moulds can cause illness by producing toxins in food. This toxin are known as?
Mycotoxins
any of a wide range of cheeses made with the addition of cultures of edible molds
Blue cheese
What are the foods are best to throw out any food that has become moldy?
soft fruits and veggies, soft shredded or sliced cheese, bread or baked goods, cooked grains and pastas
What should you keep?
hard cheese, hard salami,
dry-cured ham and firm produce like
carrots and bell pepper
Toxin on wheat and grains can cause?
vomiting, convulsions, and even gangrene in a serious case
examples of natural poisons
red kidney beans, fish, and mushrooms
Crops can absorb pesticide during growth. The food might then be used in its natural state or used to produce food products to humans and animals. Either way, the pesticides find their way into human foods and can cause illness. Poisoning can occur also from consumption of fish caught in waters contaminated with chemicals.
Chemical poisoning
is usually in the form of pesticides
chemical contamination
also added to food as preservatives, colourings and
flavourings for example.
chemicals
Sometimes the consumption of large amount of a permitted food additive can cause illness.
monosodium glutamate
Toxic metals include?
antimony, cadium,
copper, lead, tin, and mercury.
Metal poisoning will cause?
vomiting and abdominal pain within an hour, if
sufficient quantities are eaten.
Used in the enamel coating of equipment and will not normally cause
problem unless enamel is chipped
ANTIMONY
Used to plate utensils and some parts of electric cookers and fridges can
be attacked by acids in some foods and may then contaminate them
CADMIUM
Used in fittings for equipment such as drinks machines. Worn fittings
may contaminate food. Copper can also cause fats and oils to turn rancid
COPPER
Lead from petrol can poison foods as they grow. Lead is also used in the glaze of some earthenware and can be released if in contact with acidic food.
LEAD
If tinned foods are kept for too long, the acid in the food can begin to break down the metal and it may be absorbed into the food.
TIN
Used in a variety of indutries. Its accidental release into water or on to
land may cause contamination of food.
