What methods can be used to preserve the vitamin content of food?

A
  • Freezing foods
  • Storing Foods in a cool, dark place prevents nutrient loss as some vitamins are light sensitive, or will degrade at warm temperatures
  • Cooking: it is best to keep cooking times to a minimum, cook until Al dente. And, avoid boiling veg in large amounts of water because vitamins will leach out into the water
