what’s the equation which takes place in yeast cells
Glucose –> Carbon Dioxide + Ethanol
what is fermentation
fermentation is when micro-organisms break sugars down to release energy by anaerobic respiration
what causes the bread to rise
the carbon dioxide produced by fermentation causes the bread to rise
what produces lactic acid
bacteria called Lactobacillus respire a sugar called lactose in milk to produce lactic acid
what does the lactic acid do
the lactic acid turns the milk into yoghurt giving it a thicker texture and sour taste
what are the factors effecting micro-organism growth
1) Moisture Availability
2) Temperature
in regard to microorganisms cultured in industrial fermentation. What must the conditions in the fermenters be for the right microorganisms to grow and respire
1) Plenty of nutrients available
2) Optimum temperature
3) Oxygenated
4) Aseptic Conditions - Dangerous Micro could grow
5) Optimum pH
