What four meats do we serve from the Stonefire Grill?
- Chicken
- Tri Tip
- Baby Back Ribs
- Salmon
Please explain our two-step cooking process for our meats:
• Our chicken, ribs and tri tip are slow cooked overnight in our ovens and then finished on the mesquite grill or in our broiler.
How would you describe our BBQ Tri-Tip, Baby Back Ribs, and chicken?
• After being slow cooked overnight, our BBQ chicken, ribs and tri tip are grilled and basted with our signature BBQ sauce. The tri tip is cooked according to the guest’s specification (rare, medium etc.)
Describe our Lemon Garlic Chicken:
• Our chicken that has been slow cooked is basted with our lemon garlic sauce and placed in our broiler. Our lemon garlic sauce includes fresh lemon juice, garlic, parsley, olive oil and seasonings.
Describe our Salmon:
• Our salmon comes in half pound size, slow-cooked in our oven and finished in our broiler. It is glazed with a choice of sesame glaze or lemon garlic sauce.
Describe our Pepper Garlic Tri-Tip:
• Our tri tip is seasoned with seasoning salt, cracked pepper and garlic and slow cooked overnight. It is then finished in our broiler and topped with our Gorgonzola butter and Au Jus.
Describe our Gorgonzola Butter:
• It contains Gorgonzola cheese, fresh parsley, and butter.
When a guest orders Tri-Tip, unless otherwise specified, how do we default to cook it?
• Medium
What are the different levels of done you can request for our Tri – Tip? Hint, there are 5.
- Rare: mostly pink throughout
- Medium rare: pink throughout but slightly dark around the edges
- Medium: slightly pink in the middle
- Medium well: no pink showing at all
- Well done: no pink showing and more well done on the outside
What is served with our Individual Meals from the Grill?
• Choice of either an individual Garden or Caesar salad OR personal side, AND 2 breadsticks.
Is there an additional charge if a guest orders all white meat on a bone-in chicken item?
No
How big is a Whole Tri-Tip? Half Tri-Tip? How many people will each feed?
Whole: 2 lbs. and serves 4-5
Half: 1 lb. and serves 2-3

If a guest wants Boneless Chicken Breast only instead of Half Chickens, what is our policy? Is there a charge?
