- AM (cleanliness, pain, injury, movement, basically if fit to slaughter)

actinomycosis
AM - lumpy jaw, ulcerations, difficulty breathing,
judgement
- slight and confined to 1 LN = LN removed, rest fine
- tongue disease + no LN = tongue removed, rest fine
actinobacillosis
AM - swollen tongue, enlarged LN, chewing and salivating
PM - wooden tongue, fibrous consistency, cluster of yellowish nodules
brucellosis
AM = swelling of scrotum
judgement = cattle and horse can be used, unless abortion type then NO
leptospirosis
AM - loss of appetite, fever, mastitis, milk yellow, clotted
PM - anaemia, jaundice, sepsis, haemorrhage
- judge - acute = condemned, chronic may be used
listeria
AM = encephalitis, fever, abortion
PM “ “ sepsis, all UNFIT
salmonella
- AM = sepsis, enteritis
PM = “ “
judgement - condemned
TB
AM - no specific symptoms
PM - granulomas, lesions everywhere
Judge - leison in just LN + 1 other organ = remove that part everything fine
- lesions several organs = unfit
swine eryspelas
judge = erythema/diffuse condemned on AM
cysticerosis
bovine - infected with larvae unfit, unaffected parts allowed after freezing
pig same as cow
trichinella
sampling at slaughter and invaded meat is condemneted
poultry meat
salmonella + campylobacter - no clinical manifestation
PM - hepatitis, arthritis = condemned
fracture - part condemned
welfare - 0= no ulceration, 1 = mild, 2 = severe
50 chickens from 1/3 of slaughtering groups
