- deliberately added

- biological = MO bacteria, virus, parasites
- cehmcial = ATB, heavy metals

- harmful effect on health, added during prod/naturally occurring
- natural toxins = mushroom, animal origin, microbial toxin
- environmental toxin = radioactive elements, nitrates and nitrites, pesticides

histamine
- improperly stored fish
- causes indigestion, skin/neurologial changes

- tissue suffering from BSE, not broken down via gut

A
- dioxin - source in food, found in air
- health risks = cancer + repro problems
- accumulate in fatty tissue/meat, mil and dairy should be avoided
- PAHs in food, grilling, smoking, cooking = main source

- highly toxin, accumulate in ecosystem
- Cd = fossil fuels, avoid consuming liver and kidneys
- Pb = widespread, enter during production
- mercury - seafood consumption
