What are functions of magnesium
-Helps with formation of bones and teeth, and therefore essential for growth
-Cellular metabolism- present in ionic form of all tissues- plays a part in many reactions involved in production, transport and utilisation of energy
-Involved in synthesis and manufacturing of proteins
-Present in cell fluids and needed for enzyme activity, thus assists in the control of muscle tone of the heart and blood pressure
Explain the absorption/ Deficiency (Bioavailability) of magnesium
-BODY REGULATES ABSORPTION VERY EFFICIENTLY
-Deficiency- rare
-Deficiency is likely as a result of kidney damage, not a low intake- symptoms hard to recognise
-Occur in alcoholics- or where absorption is decreased- surgery/ burns
-50-60%- stored in bones- key role in metabolism
-Diet low- unwanted increases in inflammatory processes
What is an excess in magnesium
-Not common- body elimitates excess amounts
-Signs- vomitting, extreme low blood pressure
-Occurs when magnesium is supplemented
What are interactions with magnesium
-Assists absorption of calcium and potassium- body may lose mg due to excessive calcium
-Together with B12- prevent calcium oxalate kidney stones
What are the effects of Magnesium on Cooking
-Lost in cooking
-Cook in minimal amount of water
