Functions
-forms part of the enzyme system concerned with the oxidation of glucose and release of energy
-essential for upkeep of tissues, eg skin and eyes
-maintain uptake of other B vitamins- created B3 from the conversion of the amino acid tryptophan
Deficiency
-cracks appear at side of mouth
-tongue becomes red and swollen
-in severe cases, blood vessels invade the cornea of the eye
Excess
body excretes as it’s water soluble
Factors affecting absorption
-light sensitive
-heat and air have little effect- light is it’s main damaging factor
-slightly soluble
-fairly stable to heat
Effects of cooking
-slightly soluble to water
-fairly heat stable
-overall loss is lower than thiamin
