Lipids Flashcards
How does chain length affect MP of fatty acids?
longer chain=higher melting point
How does unsaturation affect MP of fatty acids?
more unsaturation=lower melting point
Which end of a fatty acid is the delta end? Omega?
delta=carboxylic acid end
omega=hydrocarbon end
What are waxes?
mono esters of long-chained alcohols and fatty acids
What is Claisen condensation reaction?
a N nucleophilic acyl substitution reaction using carbanions to form new C-C bonds
What are two modifications to Claisen condensation reactions in biological systems?
thioesters are used because they are more electrophilic and RS- is a better leaving group (than RO-)
decarboxylation of malonyl thioesters are used as carbanion equivalents
What is Michael addition?
the addition of a nucleophile to the beta-carbon of an alpha,beta-unsaturated carbonyl
What are soaps?
the metal salts of fatty acids
How are soaps prepared?
by the hydrolysis of triglycerides
What are detergents?
contain a hydrophilic head that is not a carboxylate group so they don’t precipitate out of solution in the presence of polyvalent ions
What is usually found in a cationic detergents?
quaternary ammonium slats
What kind of head is found on non-ionic detergents?
hydrophilic heads that don’t have any formal charge
Name two additives found in detergents
phosphates and silicates
What is a phospatidic acid?
glycerol with two fatty acids and a phosphate
What is a phospholipid?
phosphatidic acid with an alcohol esterfied to the phosphate
