What are the 2 groups of lipids?
triglyceride & phospholipids
What is the structure of a fatty acid?
- R-group attached to hydrocarbon chain (saturated or unsaturated)
- carboxyl group (COOH)
What is the difference between saturated & unsaturated fatty acids?
saturated has no double carbon-carbon bond whilst unsaturated has at least one in the hydrocarbon chain which creates a kink in the chain
How do triglycerides form?
one glycerol molecule joined to 3 fatty acids forming 3 ester bonds by a condensation reaction which produces 3 molecules of water
How are the properties of triglycerides related to its structure?
function: energy storage
- high ratio of C-H bonds to C atoms - used in respiration to release more energy than same mass of carbohydrates
- hydrophobic/non-polar - clumps together as droplets which don’t affect water potential & can be used for water proofing
What is the structural difference between triglycerides & phospholipids?
phospholipids have a phosphate group instead of one of the fatty acid tails
How are the properties if phospholipids related to its structure?
function: form a bilayer in plasma membrane allowing diffusion of non-polar substances and restricting polar substances
- phosphate heads are hydrophilic to point outwards
- fatty acid tails are hydrophobic to point inwards
What is the test for lipids?
- Add ethanol, shake & then add water
- Milky white emulsion produced from positive test
