how are triglycerides formed

A

one molecule of glycerol is combined with three molecules of fatty acids (can be diff), where one water molecule is removed for each fatty acid joined to the glycerol via ester linkage which is a bond formed by a dehydration reaction

A

the c=c double bonds cause a structure kink, preventing adjacent fat molecules from packing together

what is the difference between cis and trans fatty acids

A

natural unsaturated fatty acids are in cis transfiguration where 2 H atoms are at the same side of the double bond while trans is the opposite
