- have strong dispersion forces between long carbon chains
- have higher melting points & are usually solids at room temperature

describe the properties of unsaturated fatty acids
A
- the cis double bonds cause the carbon chains to bend/kink; which gives the molecule an irregular shape and allows fewer interaction between molecules
