LAB Flashcards
1
Q
How is lactic acid produced?
A
breakdown of simple carbohydrates by lactic acid bacteria
2
Q
What are other names for lactic acid?
A
milk acid, 2-hydroxypropanoic acid
3
Q
what are the 2 classes of lactic acid bacteria
A
homofermentative, heterofermentative
4
Q
homofermentative
A
- produce two moles of lactate from one mole of glucose, produces 2 ATP
- use the glycolytic pathway
5
Q
heterofermentative
A
- produce one mole of lactate from one mole of glucose, carbon dioxide, and acetic acid or ethanol. Produces 1 ATP
- use the 6-PG/PK pathway
6
Q
Characteristics of LAB
A
- gram positive
- produce lactic acid during the fermentation of carbohydrates
- rods or cocci
- non-sporeforming
- commonly found in healthy mucosal surfaces
7
Q
Preferable environments
A
high nutrient and vitamins, have a high acid tolerance (cuz they produce acid)
8
Q
examples of LAB
A
Enterococcus, Lactobacillus, Lactococcus, Leuconostoc, Streptococcus
