Solid fixed volume
Solids are incompressible because the particles are very close together. Thus, the volume of a solid is fixed.

Liquid fixed volume
Liquid particles are further apart from each other than solid particles. However, the liquid particles are still packed quite closely together. Therefore, liquids are incompressible and have a constant volume.

Gas no fixed volume
Particles of gas have much more space between them. They can be forced to get close to each other. Therefore, when pressure is applied, the gas is easily compressed. Gases are compressible, so their volume is not constant.
