What is the process for cleaning glassware?
Empty glass into open drain. Wash with sudsless soap and brush. Rinse in cold water, heel in, heel out. Rinse in sanitizer. Dry on rack so air circulates inside. Rinse with cold water before dispense
What are two ways to check a beer clean glass without beer?
Sheeting
Salt Test
What is sheeting?
Wet glass
Empty it
Hold up to light and inspect for sheeting
What is the salt test?
Wet glass.
Sprinkle salt throughout.
Places where salt does not stick are not beer clean.
What are 3 signs of a non beer clean glass with beer in it?
Poor head size, shape and retention.
Bubbles clinging to the side of the glass.
Poor or no lacing on the glass after drinking.
What temperatures are acceptable for beer glassware?
Room temperature or chilled… not frozen.
Why is frozen glassware bad?
Causes foaming.
Makes beer too cold.
Frozen water or sanitizer may be present.
Why do we rinse glasses before filling?
Removes residual sanitizer
Cools glasses down
Aids ideal head formation and retention
Do you store bottle-conditioned beer upright or on it’s side?
Upright.
What are some signs of old or unstable bottled beer?
White flakes in the beer.
Thin ring of gunk at the liquid level.
When do you pour yeast from a bottle conditioned bottle?
Customer requests it.
