Chemical preservatives create a concentrated solution which dehydrates and kills microbial cells
The acids lower the pH level creating an acidic environment which inhibits microbial growth and inactivates enzymes as they prefer a pH of 7

What is the underlying principle of pickling?
Brine acts as a preservative as salt dehydrates microbial cells by osmosis causing them to die
