Esophagus. Squamous non-keratinized epithelium.

Ganglion cells of the myenteric plexus, sandwiched in between the inner circular muscle layer and the outer longitudinal muscle layer.

This is a picture of the stomach taken on endoscopy. The reason you can’t see rugae is that the stomach was inflated with air.
