What is the definition of ripeness
- the time at which the combination of the sugar, acid, tannin and aroma ripeness is at its most favourable
- This will depend on wine style, grape variety, the preferences of the winemaker, in order to produce a balanced wine.
- Focus on tannin/aroma ripeness as sugar, acid & alcohol can be adjusted

Uses light absorption and reflection patterns of grapes to determine composition. Colour, sugar & acid
