  • the time at which the combination of the sugar, acid, tannin and aroma ripeness is at its most favourable
  • This will depend on wine style, grape variety, the preferences of the winemaker, in order to produce a balanced wine.
  • Focus on tannin/aroma ripeness as sugar, acid & alcohol can be adjusted
