  • winemaker Fred Merwath is credited to leading the finger lakes quality revolution, took over in 2003 after being Hermanns apprentice for years
  • founder Hermann Wiemer hails from Bernkastel, Germany
  • his mothers family has been producing wine for over 300 years and his father was in charge of Bernkastels Agricultural Experiment Station and restored Mosel after WW2
  • founded in 1979
  • Hermann retired in 2007, leaving the winery to Fred who partnered with his university friend, swedish agronomist Oskar Bynke
  • 90 acres on the western slopes of Seneca Lake
  • hand harvested and hand sorted, indigenous yeast
  • certified biodynamic in 2023 but has been without synthetic chemicals for years
  • refreshing acid, clean mineral finish, citrus, white peach, tropical fruit

  • winemaker Eric Prahl
  • carricante produces ageworthy wines with outstanding acid and minerality
  • herbaceous, dill, good body

Domaine des Sables Vert Saumur Blanc
Saumur-Champigny, Loire Valley, France
- In 2019 Caroline Meurée and Hervé Malinge took over for Alain & Dominique Duveau
- actively converting towards organic
- 33 plots with average 40 y/o vines
- “green sands” rich in glauconite (special to the Saumur region apparently¿) bring freshness / over limestone bedrock
- vatted by gravity, minimal sulphur

  • 100% chenin blanc
  • 2 y/o vines
  • 50% sourced from ‘Bonneveaux’ and ‘Elettes’ aged for 4 months in used French oak barrels with regular battonage / 50% sourced from ‘Rouères’ vinified in stainless steel

- winemaker Rob Griffin and wife Deborah Barnard founded in 1983
- one of the oldest wineries in Columbia Valley
- Rob Griffin graduated UC Davis in 1977
- daughter Meghan Hughes took over as second generation winemaker, studied viticulture and enology at Washington State University

- 12 hectares certified organic
- the estate dates back to 1785 when Bera’s ancestors purchased the land from the Knights if Malta
- theres is the first estate to bottle and sell its own wines in the Canelli region
- estate is located in Sant’Antonio di Canelli within Serra Masio, the most prestigious and ancient of moscato production

  • 100% Muscat a petit Grains cultivated on steep, southeast slopes of calcerous marl
  • hand harvest
  • native yeast
  • spontaneous fermentation without temperature control or sulphur
  • not sterile filtered
  • aged on lees at cold temps
  • at 5.5% abv it is gently filtered into a pressurized tank then bottled

Lumache pasta in brown butter squash purée. Finished with roasted butternut squash, delicata squash, Swiss chard, grana padano, lemon zest, chives, Aleppo, brown butter breadcrumbs, and olive oil.

Pork Cutlet

A

Mushrooms, Black Garlic, Thyme

Pork cutlet pounded thin, breaded in flour/egg/panko breadcrumbs, and pan fried. Mushroom black garlic sauce is poured over. Topped with shiitake and maitake mushrooms, parsley and garnished with grated grana padano, lemon zest, and either red mizuna or watercress.
