Northeast grain shed: a term used to describe the regional network on grain production, processing, and distribution. Traditionally not at all known until local food movements (beer, distilleries, bakery’s) put the large production on the map.

Corned Beef on Marble Rye

A

Brisket is trimmed and brined in salt, sugar, and water for 5 days then seasoned with fennel, coriander, and blackpepper before being slow cooked for 12 hours and sliced thin. Layered with cornbeef, swiss cheese, sauerkraut, krautrelish, and russian dressing. Finished with red wine vinegar, parsley, chives, and olive oil.

Wood-fired Bass

A

Mushrooms, Turnips, Spinach

Base is a white pepper fumet made with alliums, ginger, fish bones, dark soy, and black vinegar. Oyster, shiitake, and king trumpet mushrooms sauteed with turnips and spinach. Two pieces of skin off black bass are grilled and finished with lemon juice and olive oil. Garnished with turnip shavers, mushroom shavers, and cilantro.

Brick-pressed Chicken

A

Green lentils braised in chicken stock with thyme, bay leaf, onion, carrot, and celery. Blanched carrots are folded in and finished with a dijon vinaigrette. Boneless chicken breasts and thighs are brined and pressed on the grill. Finished with chicken jus, escarole, endive wings, carrot shavers, chives, garlic, and parsley.
