Pinot Noir (36%)
- Difficult grape to grow: thin-skinned, small berries prone to rot and mildew.
- Uninteresting if overcropped.
- Lower tannin & anthocyanins make it harder a very delicate grape to vinify
- Believed to have been brought by the Romans in 4th C
- Prone to mutation
- Tends to grow better on limestone soils
Gamay (7.5%)
- Potentially named after village of same name close to Puligny-Montrachet
- Early budding, flowering & ripening -> susceptible to spring frosts
- Easy to let it overproduce -> gobelet
- Very little in Burgundy, mainly in Cote Chalonnaise

- Chardonnay (46%)
- Hardy, easy to grow & versatile
- Can produce interesting wines at hi yields
- Aligoté (6%)
- Hardy grape variety
- Less replanted post-phylloxera in favour of Chardonnay
- Mostly thin, hi-acid wines
- For Bourgogne Aligoté & Crémant
