What is gluten
A protein found in wheat and some other cereals
What does gluten cause
It causes a coeliac to react when they consume any food containing gluten.
What food is not allowed in the diet of a coeliac
Any product which contains wheat flour is not allowed in the diet of a coeliac
What has been produced to allow coeliacs to enjoy a ‘normal’ diet

What ensures that the gluten free muffins rise
The baking powder
What is baking powder a mixture of
Tartaric acid and sodium bicarbonate (alkali)
And when a liquid is added to these chemicals they react together, producing a tasteless salt and carbon dioxide gas. This gas expands in the oven and causes the muffins to rise

Keep dry ingredients separate from liquid ingredients until the last minute, do this to delay the reaction which causes the muffins to rise

Do not over mix the muffin batter, to ensure that the muffins have an open texture

Transfer the batter paper cases and place into oven quickly to ensure that the chemical reaction which causes the muffins to rise occurs in the oven and not in the muffin cases
