Peninsula Gin
How is it made?
- Our wheat vodka is put back into the still and heated to 100 degrees (well below the boiling point of ethanol)
- Add coriander, juniper, grains of paradise, angelica root, lemon, and orange peel to make a “tea” over 8 hours.
- The following day, run it back through the still and the ethanol takes the fatty acids from the botanicals as a flavor for the gin.

Barrel Finished Gin
How is it made?

Because it is aged in whiskey barrels, this tamps DOWN the botanicals (compared to the peninsula gin) and puts a layer of toasted oak and vanilla over the spirit.

How is it made?
We import Bahamian molasses which is fermented and distilled.

How is it made?
- Imported Bahamian Molasses is fermented and distilled to make the rum.
- The rum is aged in a whiskey barrel.

Seven years.

This is warm like a brandy, but sweet like a liquor.
It has distinct whiskey overtones based on the time it spent in the oak barrel.
