Explain two sparkling wine AOPs of Burgundy.
- Crement De Bourgogne: Debuted in 1975 as a hand harvested, traditional method white and rose sparkling wies, principally produced from Chardonnay and Pinot Noir. They can be produced all over Burgundy but much of the production is concentrated in the commune of Rully in Cote Chalonnaise, where Burgundy sparkling wine was born in the 19th century.
- Bourgogne Mousseux: Older appellation exlusively for sparkling reds produced via traditional method in fact once the first sparkling wines appeared it was not uncommon to see red reditions of many of the famous crus like Clos de Vougeot or Chambertin.
