A

Nuit : Faces east, half as much land under vine, more limestone, steeper slops, reds, more oak

Beaune : Southeast, wider vinedays, communes in side valley too, not just on cotes, more marl, higher elevation and whites.

A

3 essential factors : Oak, Batonnage and Destemming

  1. Aging in 228 litre traditional oak barriques
  2. Grand Crus treated to 50-100% new oak ; village or Bourgogne AOP may see none
  3. Top red wines remain in barrel for 15-18 months
  4. Best whites age at least one year prior in wood
  5. Most white wines undergo malo lactic fermentation
  6. Traditionally winemakers would destem, modern winemaking involves whole cluster.
  7. Batonnage - 1990 more now less.

A

Stirring the wine’s lees during elevage (fermentation to bottling)

Frequent stirring is an oxidative procedure that can round out young wines, but wines destined for longer lives do not neccessarily require the immedite richness and texture that batonnage offers.
