These include various species such as rabbit pheasant and quail meat usually has a dark colour less fat robust flavour and more compact structure than other meat or poultry
How is game meat used
young animals are more suitable than older ones as the meat is more tender and can be prepared using dry heat cooking methods
the legs and shoulders are tougher and should be prepared with a combination cooking method and less tender cut can be used for sausages or smoked
What kind of game meat is used in food service
only farm raised may be used in food service
Talk about grouse meat
Patridge are found in the countryside and mountainous areas and wildly grown on farms and has a less delicate flavour than pheasant and the meat is tender tends to be firmer and can be sautéed and cut into pieces
Talk about pheasant meat
The most popular game with a mild flavour making it perfect for frying stewing or braising it is smaller and more sensitive than chicken and often used for consommer and sauces
Talk about quail meat
A very small bird with a breast of 30 to 60 g suitable for cooking techniques such as grilling frying or sautéing. It is usually deboned and served hole with a feeling quail is very lean.
What are the storage conditions for game meat
Should be well packaged fresh or frozen and should be stored in a refrigerator at temperature below 5° since the meat is generally dry and lean
frozen meat should be used within four months thaw meat slowly and refrigerate to prevent moisture loss
